Identification

Overlapping shelves on wood: gray-blue to brown caps, decurrent white gills, lateral stubby stems. Flesh white, faint anise.

Edibility

Choice edible; one of the most cultivated mushrooms on Earth. Also commercially relevant as a vitamin D source when UV-exposed.

In practice

  • On wood + shelf cluster + decurrent gills = oyster.
  • Winter finds stay usable; spring finds get woody.
