Identification

The familiar white/brown cultivated mushroom; cremini and portobello are the same species at different ages.

Edibility

Edible cooked — the industry standard. UV-exposed mushrooms carry meaningful vitamin D2 (the industry uses this).

In practice

  • The wild counterpart for foragers is the field mushroom.
  • Bought mushrooms: cook — raw agaricus carries agaritine, which cooking reduces.
